Kittle Symphorien
Kittle Symphorien grew up in Soufrière with mangoes and cocoa pods in her backyard. Today, she turns locally grown cocoa into chocolate at Sugar Beach, following the process from pod to finished piece.
Beans ferment and dry in the sun, stone grinders run for hours, and each bonbon is finished by hand. For Kittle, the time is part of the craft, revealing where the chocolate comes from and the work behind every bite.
Vitus Joyeux and Elijah Jn Baptiste
Between Vitus Joyeux and Elijah Jn Baptiste are more than six decades spent exploring Saint Lucia’s waters. Their knowledge of the reef has been built dive by dive, through close observation and an understanding of how to move through it with care.
For Elijah, diving can be as simple as listening to your own bubbles and hovering in stillness. Alongside Vitus, he invites guests into that world, where seeing the reef up close can change the way you understand and value it.
