A New Era of Dining at Viceroy Los Cabos: Meet the Resort’s Reimagined Restaurants and Bars.

Art & Design

Step into a new era of flavor at Viceroy Los Cabos. Explore five distinct reimagined dining concepts rooted in local Baja culture and design.

A diner is poured a glass of wine at Cielomar

At the edge of sea and sky, Viceroy Los Cabos has long been heralded as an architectural sanctuary overlooking the Sea of Cortez. Through an ambitious undertaking of resort-wide enhancement, guests will find refreshed spaces that honor the original vision of the architect, alongside new additions that usher in a transformative new chapter.

Rather than an afterthought in the renovations, each of the resort’s restaurants and lounges has been re-imagined as a cornerstone of one of Mexico's foremost culinary and cultural destinations. NIDO, Casero, and Luma emerge refreshed and with a refined philosophy of cuisine and service, while two new concepts have been unveiled–Archaea, an exclusive speakeasy, and Nodo Market, a lively, all-day gathering place. Together, these destinations form an expansive culinary journey that guides guests through global flavors, traditional recipes, and inspiring spaces, ensuring no two meals, or moods, are ever the same.

NIDO: Honoring an Architectural Icon

NIDO has long stood as one of the most recognizable and photographed restaurants in Los Cabos. With this new renovation, it enters a dynamic new era that honors the signature woven-nest architectural heritage while expanding the breadth of culinary offerings to include breakfast and relaxed daytime dining that transitions into serene evening meals.

The reimagined space introduces a sleek, integrated bar alongside a dedicated sushi counter, allowing the menu to reflect a new facet of Japanese precision and harmony, while leading with local ingredients. The freshest seafood and choicest cuts of Wagyu and Prime Rib are presented in an omakase experience, where every detail is intentional, and every moment is considered.

Nodo Market: Italian Tradition Meets Regional Flavor

An entirely new concept to the resort, Nodo Market offers a lively point of convergence to guests and locals. Taking its name from the Italian word for "node," it is designed as a gathering place where guests, artisanal products, and culinary heritage connect. Bringing together an Italian restaurant, cafe, market, and center of culinary and mixology programming, Nodo is the heart of the resort.

Mornings begin with pastries and espresso, afternoons offer market-style dining and Mediterranean bites, and in the evenings Chef Salvatore Morina leads the full service restaurant, infusing Italian techniques and tradition with the flavors and ingredients of the Baja California Sur region.

Casero Restaurant: Elevating the Art of Warm Hospitality

In Mexico, hospitality is anchored by deeply rooted traditions and an unwaveringly warm welcome. Casero embodies the spirit of its name: “homemade food, made with love”, blending traditional flavors and local ingredients into a dining experience that immerses you in the heart of Mexican culture. Following a vibrant design refresh, the restaurant’s warm, earth-toned interior seamlessly blends into the surroundings and tables overlook the resort's restored Water Mirrors, lending the space a sense of openness and uninterrupted connection to the outdoors.

Casero

Mornings at Casero invite guests to savor slow breakfasts featuring heirloom blue corn tortillas, fresh tropical juices, and regional salsas. In the evenings, the restaurant becomes a comforting gathering place where family-style dishes, slow-cooked braises, and authentic coast-to-coast Mexican recipes take center stage.

Archaea Speakeasy: A Clandestine, After-Dark Address

Tucked out of sight within the property's sculptural architecture lies Archaea, an exclusive 24-seat speakeasy designed as Los Cabos’ most intriguing after-dark address. Every encounter here is highly personalized and entirely irreplicable. Shrouded with intrigue, the limited seating and intimate atmosphere of Archaea offers a distinctive late-night experience for guests seeking something rare and unscripted.

With no printed menu and a selection of rare, collectible, and limited-edition artisanal spirits, each cocktail takes shape through a conversation between the guest and the bartender, guided by the bottles available that evening, native Baja botanicals, and an inexhaustible sense of curiosity.

Luma: Expansive Views For Unforgettable Nights

Luma's updated, minimalist design provides an unobtrusive frame for the Sea of Cortez' dramatic sunsets, while the vibrant hues of red, orange, and pink are reflected by the nearby Water Mirrors. A social hub of the resort, this is a quintessential setting for a quiet cocktail or a lively late-night, where worries fade away into the sea along with the setting sun.

During the daytime, sip authentic Mexican coffee, and as the evening starts to set in, craft cocktails that highlight the region's renowned tequilas, mezcals, and botanical flavors take center stage, alongside a curated wine selection and a menu of light bites.
