Awacate Mexican Kitchen, Viceroy Los Cabos’ newest restaurant, is pleased to announce its second Chefs Takeover gastronomic event. Collaborating with Regina Escalante, a seasoned chef with global culinary expertise, Awacate is set to unveil an extraordinary Mexican menu. Infused with international influences yet retaining the authentic flavors of the region, our offerings promise a unique dining experience that celebrates the essence of Mexican cuisine.

About the Chef: Regina Escalante Bush

Born on August 29, 1988, in Mérida, Yucatan, Regina blends her Yucatecan roots with culinary expertise gained from around the world. Mentored by her American mother, Regina's journey began at seventeen in Portland, Maine, learning alongside Chef Cheryl Lewis. She furthered her skills at the Paul Bocuse Institute in Lyon, France, interning at Michelin-starred establishments in Paris and Marseille, including "La Table de Lancaster" with Chef Julien Rocheteau, "Hotel de Crillon" under Chef Christopher Hache in Paris, and "Le Petit Nice" with Chef Gerald Passedat in Marseille.

Motivated by her deep affection for her homeland, Regina returned to Mérida in 2013. Teaming up with Chef Vincent Ros, they established Merci, where she assumes the role of executive chef. Their restaurant offers breakfast and lunch featuring fresh local produce, with seasonal menu rotations that seamlessly blend global techniques with local flavors.
