Jetzabel Rojas Barragán grew up in a big family surrounded by aunts and grandmothers who ingrained in her a deep love for Mexican cuisine and a reverence for the value of traditional cooking. With the passion for the culinary building in her, she longed to learn about the different and rich regional cuisines of Mexico and take her skills to another level.
In July 1999, she enrolled in the Culinary Institute of Mexico in the city of Puebla – where she not only honed her knowledge and skills, but also was “able to experiment more than I could imagine!”
Following graduation, she garnered experience in restaurants in the United States where she was greatly influenced by renowned restaurateur Thomas Keller. Later, she returned to Mexico to a restaurant in the town of Huatulco – where her flair and style caught the attention of the Viceroy Riviera Maya, and she was invited to join the resort’s staff as chef.
In every dish she creates, Chef Jetzabel starts with an original Mexican dining experience, and then adds international influences and her own creative inspiration – which is the formula for the refined Mexican cuisine served at the resort.
