Egon Aichinger, Executive Chef at Viceroy Maldives
Born and raised in Austria, Egon Aichinger has enjoyed an illustrious and geographically intense career as a restaurant and hospitality chef, overseeing culinary operations for recognised branded properties..
Egon’s culinary journey started in 1983 while still a student. As an Apprentice Chef, he trained in all aspects of fine dining, banqueting and international cuisine at the Hotel Bayerischer Hof, Munich, Germany. Once he completed his training, Egon began his cooking career at top hotels, such as Hyatt Regency Dorado Beach, Puerto Rico and Grand Hyatt Washington.
Egon then moved to the Hyatt Regency Greenwich, Connecticut, where he again advanced through the kitchen ranks to Executive Chef, implementing and developing new dishes and recipes for all restaurants, including the opening of a new signature northern Italian restaurant.
After leaving Connecticut, Egon extended his experience as Executive Chef, working across the globe in various 5 star establishments including Sheraton Design Center Hotel, Florida, Crystal Cruise Line, California (6 Star Cruise Line), Spa and Resort Hotel Geinberg, Austria ( 5 Star Resort and Hotel) and Hilton Dublin Kilmainham, Ireland.
Egon’s more recent positions have taken him to the Maldives, as Executive Chef for Veligandu Island Resort and consulting Executive Chef for Velaa Private Island where he oversaw the culinary operations of new dining concepts and led teams a team of 43 chefs.
