Executive Chef Mirko Paderno brings time-honored classic Italian cuisine to LIVELLO, the signature restaurant of L’Ermitage Beverly Hills. Hailing from an extensive background of world renowned culinary ventures, Paderno has established himself among Angeleno’s as an innovator in Italian cuisine..Staying true to his Italian training, Paderno takes pride in creating a menu inspired by locally-sourced, fresh ingredients showcasing what he calls “modern Italian food with regional touches.”
Paderno began his journey to Beverly Hills at the Cesare Ritz School in Merano. Under Chef Sergio Mei at the Four Seasons Hotel in Milan Paderno developed a style that focused on the flavor of the food above all else. In 1999, Paderno moved to the United States settling into Los Angeles as as the Executive Chef at Piero Selvaggio's restaurant, Primi. Paderno continued to win the hearts of Angelenos at Selvaggio's Valentino restaurant in Santa Monica, Celestino Drago, Dolce, and All' Angelo. After working with Chef Andrea Cavaliere to open Cecconi's in West Hollywood, his great acclaim led him to Viceroy Hotel Group where he was recently named Area Executive Chef overseeing the kitchens of Oliverio, the signature restaurant of Avalon Beverly Hills, and our very own LIVELLO.
